The following information was obtained verbally from Kraft Heinz staff unless otherwise noted.
Process Description: The Kraft Heinz Company (Kraft Heinz) in Champaign, IL, operates a food manufacturing facility. It is equipped with three boilers: one 75 mmBTU/hr and two 60 mmBTU/hr. Raw materials such as starch, flour, alcohol, and other ingredients are delivered by truck and rail. Starch is sifted and stored in a silo upon arrival, then transferred to storage silos via an auger for batch processing. It is subsequently used in three slurry systems equipped with fans and water misters to minimize dust. Approximately 95% of flour arrives by rail and is stored in silos. Alcohol is converted to vinegar in acetate tanks through fermentation, then diluted with water to achieve the desired concentration for various products. Each product is manufactured according to its unique recipe and combination of primary ingredients.
Staff Interview: Kraft Heinz has 24/7 operation throughout the week and over 1,000 employees. The Champaign, IL facility is the largest of the Kraft Heinz production facilities in North America at over 2.2 million square feet. Kraft Heinz produces sauce/liquid products (e.g., A1 sauce, Heinz ketchup, dressings), which make up approximately two-thirds of production, and other products (e.g., Kraft Mac and Cheese, Miracle Whip, Mayo). The flour and starch receiving systems are both controlled by dust collectors. The spice room and xanthum gum system also each have separate baghouses. All dust collectors have quarterly filter changes and preventative maintenance. They also have rupture discs and magnahelic gauges that are routinely checked. An alarm will go off when the pressure drop reaches a setpoint. The starch slurry tanks and vinegar acetators both have separate scrubbers to

control emissions. The vinegar acetator scrubber is filled with plastic media and recirculates the scrubbant water back to the acetators. Visual checks are done to make sure the vinegar acetator scrubber is working properly. The starch slurry tank scrubbers use fiber filters and water jets and are taken apart and cleaned weekly, where the filters are rinsed.
