MANVIML ANL VILE LE 009047 o- ~~ 1968 each these VARIOUS EASTERN BEERS AND THE FILTRATIONS EMPLOYED There are three basic methods by which beer of the United States concerning filtration Schaeffer Schaef er regular draft Grils 8/1/68 8/1/68 <8/1/68 : 8 gft4 ne aehee aad is handled in the various breweries One method of which Anheuser Busch is an example uses no diatomaceous earth filtration in the standard method That is beer coming from the fermentor is allowed to settle for a relatively long period of time During this settl- ing period beechwood chips are used to help remove suspended solids From this settling tank the beer proceeds to a pulp polish filter before bottling The pulp filter consists of a series of cellulose asbestos pads which are made by the brewery These pads are set into a filter somewhat similar to a plate and frame filter and the beer is passed through the pads with no diatomaceous earth used From these pulp filters the beer goes directly to the bottling shop The make of the cellulose pads is from 85 to 95 cellulose the balance being asbestos fiber A second method of handling beer is to allow the beer to settle after the formentation and follow this settling period with a diatomite filter Beer from this first or primary filtration is then settled a second time and this second settling may be followed by a pulp polish filtration before going to the bottle shop An example of this system is the F & M Schaefer Brewing Company A third method of handling beer is to primary filter with diatomaceous earth as was the case with F & M Schaefer but after the second settling instead of going to the pulp filter the beer is sent to a second diatomaceous earth filter called the polish diatomaceous earth filtration Beer from this polish diatomaceous earth filtration then goes to the bottle shop An example of this method is C. Schmidt & Son in Philadelphia I believe the attached chart is explanatory The one exception to the three methods mentioned above is Eastern Brewing Company in Hammonton N. J. This company does not follow the standard methods of settling the beer and prefers to filter the beer coming directly from the fermentor through a diatomaceous earth filter which uses Hyflo Super The beer exiting the Hyflo Super filter then proceeds directly to a second diatomaceous earth filter precoated and body fed with Standard Super Beer from this second filter then goes to the bottle shop As you can see from the attached list there are three various types prer coats used on the polish DE filters One method is using straight diatomaceous Continued ... cP Page 2 earth such as Fuhrmann & Schmidt uses A second method is to precoat using Fibra Flo which is a blend of diatomaceous earth and straight diatomaceous earth of which Rheingold Brewing is an example The third method is to form a precoat on the polish diatomaceous earth filter of straight fiber usually a blend of asbestos and cellulose followed by a second pre- coat of straight diatomaceous earth of which Schlitz Brewing Co. in Brooklyn is an example If you should have any questions concerning the attached chart please give me a call ---- --" H.
