Evaporating pans ordinarily are shallow pans containing steam coils which, when the pans are in operation, are immersed in the material being treated The hazard to be guarded against is permitting the cod to become exposed, in which event the mate rial may be overheated or ignited and fire
or explosion result Safe practices include
1 Pans should be continuously attended as long as they are in operation
2 After each use the pans and cods should be thoroughly cleaned
3 After steam is shut off in the coils, the coils should be drained to prevent the product from being drawn into lines when steam condenses and creates a vacuum Installing a vacuum breaker would also prevent this
