Process Description: The facility produces bread and buns using two dedicated production lines. Production begins with the delivery of raw material including flour, yeast, and liquid sucrose. Ingredients for specific recipes are weighed in the scale area. The ingredients for the recipe are then taken to one of three mixers where they are mixed with yeast and material from the brew process. After mixing, the dough is conveyed to one of three dividers to cut the dough into appropriate sizes. The dough is then placed into pans and conveyed to one of two proofers. From the proofers, the dough goes to one of two ovens for baking, then through a cooling system prior to final packaging. The facility also has a brew process to pre-ferment a portion of the dough prior to the mixing stage of production. Additional fermentation then occurs once the pre-ferment is mixed with the other ingredients and continues through the proofers. There is one brew process for both the bread line and the bun line. Staff Interview: The facility has a dedicated proofer and oven for both bread and bun production. Emissions from both ovens are uncontrolled. Facility Location: 800 Boyd Boulevard, La Porte, Indiana Date of Inspection: May 2, 2024 Data Collected and Observations: EPA walked through the entire production line from the scaling of raw materials through to baked bread exiting the ovens. EPA also observed the two brew processes, which are located in open areas of the plant. During the tour EPA recorded six videos using an optical gas imaging camera, see Appendix A.
