Process Description: Mondelez Global LLC (Mondelez) operates a cookie and cracker manufacturing facility. Raw materials such as flour, sugar, and oil are imported via truck or rail and stored in silos or tanks at the facility. Dough is mixed in 2500-5000 lbs batches, allowed to proof (if yeast dough), extruded, and laid out to bake between 300-500F for 3-7 minutes. The baked product is then cooled and packaged. The packages are then printed with liquid ink before being stored in the internal distribution center and shipped out. Staff Interview: Mondelez currently has 503 employees. The boilers at the facility operate 24/7. Lines of production operate 24 hours per day for 12 days followed by two days off. Raw materials are added to the mixers via a portable hopper and carbon dioxide (CO2) is injected into the mixers to cool the dough. The facility operates five lines (#2, #4, #6, #9, and #12). Each line produces one different product, with the exception of Line #12 that alternates producing two products. Approximately 30% of their products consist of yeast dough. There are five ovens, three boilers, six vegetable oil tanks, and 24 printing heads at the facility. No coolant is added to the cooling conveyors, and all products are cooled over distance or HVAC cooling. All emissions are vented to atmosphere except for emissions from the printing heads, which are vented through a HEPA filter.
